Maras

For hundreds of years salt has been cultivated from these ponds in central Peru.

The Maras Salt Flats are filled by water from underground springs. As they evaporate, salts of varying consistencies, uses and tastes are left behind and scraped out.

The ponds, located at the bottom of a deep ravine, receive sunlight during the day funneled through a shaft created by the surrounding mountains. The concentration of the sun’s energy helps speed the slow process.

There are many uses for the salts from Maras, but one of the best is when it is mixed in chocolate.
